0:00
guys welcome to a brand new video
0:01
cooking with an odd diesel and today
0:04
I'll be showing you how to make your own
0:05
homemade focaccia or pizza style flat
0:09
breads so we'll be going to the entire
0:10
process of making the dough and
0:12
portioning it so that your flat pads are
0:15
ready to go the day you want to have
0:17
them so let's get started right on the
0:19
ball of my KitchenAid mixer here I've
0:22
put it over a scale I highly recommend
0:25
you invest in a scale they're pretty
0:26
cheap and once you start using them
0:28
believe me you're not gonna stop in case
0:30
you don't have a scale I'll give you the
0:32
measurements in cups in my blog which
0:34
you can see in the link down below so
0:36
first we're gonna measure twenty two
0:39
point five ounces of bread flour next
0:41
you're gonna measure point five ounces
0:42
of salt next I'm going to use about 5
0:45
grams of instant yeast and change the
0:48
units to grams because it's a much nicer
0:50
looking number then point one eight
0:53
ounces and it's easier to measure so 5
0:56
grams of instant yeast following that
0:58
measure about an ounce of extra virgin
1:01
olive oil so now add in your water and
1:03
start mixing at the lowest speed we want
1:07
our dough to be quite soft and sticky
1:09
and you want to knead the dough in your
1:11
mixer until it no longer sticks on the
1:14
sides of the ball but it still sticks at
1:17
the board you can see here our dough is
1:19
really sticky right now and you may need
1:21
to add some more flour to form it up but
1:25
your end product should still stick a
1:28
bit at the bottom but it should be
1:30
clearing the sides of the ball so I'm
1:33
gonna start adding some more flour while
1:35
continuing to mix so as you can see now
1:39
our dough is still stuck to the bottom
1:42
we want that to happen you want to be
1:45
quite soft and sticky but it is clearing
1:48
the sides of the ball so that tells me
1:50
that is ready and now let's move on to
1:52
the next stage so now they're going to
1:53
be stretching and folding the dough and
1:55
to start that process put a few drops of
1:58
the olive oil onto your work surface and
2:00
spread that out into a wide area and
2:02
then place your dough from your mixer
2:06
onto the surface now just rough some
2:08
olive oil onto your hands
2:10
it's gonna help you work with the dough
2:12
and better the bench scraper get that
2:14
dough all onto your surface here you can
2:20
sprinkle your bench scraper with some
2:22
oil or flour 15:1 so now what you want
2:26
to do is kind of Pat this dough out into
2:29
a rectangle which is about six inches
2:32
wide and 12 inches tall so 6 inches and
2:41
12 inches here now Pat it this out and
2:45
now just let this door relax for about 5
2:48
minutes so now what you want to do after
2:50
your dough has relaxed rub your hands
2:53
with some olive oil and Pat this dough
2:57
out so that it's twice its length just
3:10
try to make sure that when you tap
3:12
adding it out but you don't end up with
3:16
something which is super tail on one end
3:18
and super tick on the other try to
3:20
maintain the thickness so those who are
3:24
measuring with the scale this should now
3:27
be 12 by 24 or roughly that
3:34
so after you've padded it out we're
3:37
gonna fold it this technique is called
3:39
stretching and folding you're gonna fall
3:42
it onto itself into halves like that
3:51
fold this and what I like to do is turn
3:56
it over so that the streamside is down
3:58
so you folded it back into a rectangular
4:01
shape now what you want to do is spray
4:03
it with some olive oil and now loosely
4:09
cover it with some plastic wrap and let
4:12
this sit and ferment for about 30
4:15
minutes so now just repeat the same
4:17
process two more times and then we'll
4:20
get back into the process so after the
4:22
third stretch and fold procedure we end
4:26
up with something looking like this like
4:28
a pillow so here I have the same thing
4:30
but 12 inches sheet pan and I've brushed
4:33
it with some olive oil and now let's
4:36
transfer the dough onto the sheet pan so
4:38
now with the tips of your fingers start
4:41
spreading middle and you want to spread
4:43
this out so that it covers the entire
4:45
surface of this pan if you feel like you
4:49
are stretching it out but it's coming
4:51
back down like you see right now it's
4:53
not it's resisting the change and just
4:56
let this set cover it with a damp cloth
4:58
and let it sit for about 15-20 minutes
5:01
and then proceed again so that the dough
5:04
has some time to relax and then you can
5:07
further shape the dough so there you
5:08
have it guys just it's all spread out
5:11
don't worry about the corners that much
5:12
and if you want for a big party you can
5:16
bake this whole thing and it's going to
5:19
be the ultimate party snack but for this
5:21
video I'm going to be cutting this into
5:23
and but before that let's cover this
5:26
with some surround now place this into
5:28
your freezer and you want to chill this
5:30
until it's almost frozen so that you're
5:33
able to cut this and easily transfer
5:36
this onto saran wrap and wrap it up and
5:38
store this into your freezer and have it
5:41
whenever you want it a got the wrapping
5:42
it's a little bit frozen this kind of
5:45
farm that's what you want
5:48
there's your flatbread and it's almost
5:51
completely frozen so the point that if
5:54
you try to press it it does punch in a
5:58
little bit but it's still hard and you
6:00
want that to be able to transfer it so
6:02
using a rubber or silicone spatula just
6:06
kind of detach the corners from the
6:10
pants it's going to be stuck on it and
6:13
what you want to do is transfer this
6:15
from a baking sheet onto a cutting board
6:18
so we can shape this you nudge the edges
6:22
using a spatula just kind of slide it in
6:25
gently slowly take it out of the pan
6:30
just displace it so after you've taken
6:33
it out you know make sure you take it
6:35
off hole and that there are no cracks so
6:38
once it's off you can either cut this
6:40
into four valves that's what I tend to
6:43
prefer I've tried six and the flatbeds
6:47
tend to be really small and puny that
6:49
way so it's cut this in a half and you
6:52
won't be working fast since your Doh is
6:55
defrosting right now what that means
6:57
it's gonna get softer it's gonna get
6:59
stickier you don't want to work with
7:01
that so just work fast while it's still
7:03
pretty hard with frozen there another
7:06
cut here and now let's just individually
7:09
wrap this in some plastic wrap so it
7:11
should be pretty nice just literally
7:14
peel it off so there you have it guys I
7:16
just leave this in the freezer and you
7:18
can use it as you need softer about an
7:20
hour and a half to two that's why a flat
7:22
bit should look like you can see it's
7:24
nice and becoming really Airy what you
7:27
want to do is kind of spread it out of
7:29
it gently pushing it out with your
7:33
fingertips you don't want to smash it
7:36
you want it to be Airy that's gonna help
7:38
make a really nice crust and help it to
7:42
rise and there you have a guys in the
7:44
upcoming video I'll be showing you how
7:46
to actually make these flat breads into
7:49
the most delicious lunch or dinner so
7:53
be sure to kick the bell icon down below
7:55
to get notified when that awesome video
7:57
is up leave me a comment down below if
7:59
you would like me to make a specific
8:01
flatbread until then I'll see you guys
8:03
again on the next one so now add in your
8:08
water and start mixing at the lowest
