hey guys welcome to a brand new video
0:02
today I'm making really special Street
0:04
food recipe which I grew up on so these
0:07
are egg rotis when I should go to my
0:09
grandpa's place we weren't allowed eggs
0:12
in there funny thing is right opposite
0:14
the house was the most amazing egg straw
0:16
and we would sneak the rolls and eat it
0:18
on the rooftop and it was the best
0:20
guilty pleasure ever I would just stand
0:22
but start look at the guy make the
0:24
awesome rolls and he had a really cool
0:26
way of making it if you search on
0:27
YouTube you can probably see how the
0:29
traditional Street food vendors make
0:31
this dish is really cool and I'm excited
0:33
to share this awesome technique with you
0:34
so let's get started so I'm gonna be
0:36
using this parantha bread which I made
0:38
with white flour you can use whole wheat
0:40
parantha tortillas whatever you like I
0:44
like to have it with white flour it's
0:45
the more I guess traditional way here I
0:48
have two eggs give it a quick list salt
0:53
and some pepper I'm with a quick whisk
0:56
now let's heat our pan on medium heat
0:59
I'm gonna add in some ghee you can use
1:03
some butter or olive oil if you like
1:05
today I want to make it with ghee spread
1:08
that around so when you keep it comes
1:10
hot add in your bread and toast this for
1:17
about 2 to 3 minutes on each side until
1:19
it's nice and golden brown and Swinney
1:21
crispy so let's see nice and crispy now
1:27
you don't have to use your hands let's
1:30
don't bother yourself and use a spatula
1:32
so now let's set this aside on a cutting
1:34
board so now turn the pan back to heat
1:37
and your eggs magic step clam
1:42
just like that now the eggs are gonna
1:47
get stuck to the bread won't let this
1:51
cook until the eggs are completely done
1:53
and as a cool way to tell when the eggs
1:57
are done so let's go for about 30
1:59
seconds to a minute then press this up
2:02
to make sure the eggs are cooking and
2:13
let's take it out on a cutting board so
2:17
now to the fun part let's add in our
2:19
toppings so first I have this amazing
2:22
spicy chutney or tapenade me with
2:26
jalapenos you can add hot sauce if you
2:30
it all goes really well next I have this
2:33
freshly made green chutney made with
2:37
cilantro garlic ginger chilies and some
2:41
water it's you gotta be the chutney if
2:43
you check out my series about spices
2:45
call let's make it spicy well let's get
2:47
back to our oh I'm gonna top this with
2:49
some onion I love them when they're
2:52
thinly sliced some tomatoes and that's
2:56
it let's roll this guy up make sure it's
2:59
tight there you have it guys this looks
3:04
be sure to try this it makes for an
3:06
amazing lunch or a breakfast are you
