hey guys welcome back cooking with an RV
0:03
I'm gonna be making another video on my
0:05
series about Indian breads and today
0:07
we'll be making some rotis now these are
0:09
also known as polkas or chapatis I'm
0:12
gonna be doing a version with an
0:14
electric stove so I'm sure there are a
0:17
lot of you out there who do not have a
0:19
gas cooktop and are unable to make rotis
0:22
so let's get started right now and see
0:25
how to make them on an electric stove
0:33
rotis are a traditional staple food it's
0:36
the most basic form of bread in most
0:39
Indian households and it's enjoyed with
0:42
a variety of curries or even plain with
0:46
my favorite curries to enjoy with roti
0:49
includes the simple stir-fried crispy
0:51
potatoes with some yogurt which is a
0:53
really good combination it's also really
0:55
good with the potato and tomato curry
0:57
with rajma or curried kidney beans it's
1:01
amazing with chicken tikka masala pretty
1:03
much any chicken curries and it's also
1:05
really good with palak paneer or paneer
1:09
in a creamy spinach sauce even I was a
1:13
victim of the problem that I do not have
1:17
a gas cooktop so Justin you have seen
1:21
rotis first being cooked on our tawa pan
1:24
and then finished on the gas flame where
1:27
it puffs up and that's where the word
1:29
Fulco comes from this is a step that
1:31
really makes the protein a little smoky
1:34
and it makes light and fluffy but I
1:37
thought that just was not possible until
1:40
recently so I'll show you how to do that
1:43
so here I have about a half a cup of
1:46
water flour which is basically a blend
1:50
of whole wheat flour and all-purpose
1:52
it's a special blend and this is a
1:55
traditional flour used to make rotis I'm
1:58
gonna start adding a little bit of water
2:00
and start giving this a mix keep adding
2:08
a teaspoon at a time and keep mixing
2:11
until the flash starts forming adults
2:14
now my floor has formed up P
2:17
rough-looking door right now you want to
2:20
keep kneading this until it becomes
2:21
smooth now as an optional step you could
2:24
have added a teaspoon or two of molten
2:27
ghee while the flour was dry and needed
2:31
that into the ball what I'm making this
2:35
a really basic recipe and you can always
2:37
finish your rotis after they're done
2:40
with the nice brushing of warm key just
2:45
needing this to make sure the dough and
2:48
all the flour is well combined it's
2:52
smooth just keep pressing and turning
2:59
like you have a KitchenAid mixer you can
3:02
always put your flower in the KitchenAid
3:05
mixer and knead it in there but since
3:08
this amount that I'm making is so low
3:10
I'm just doing a band there's your door
3:13
it's gonna cover this with a damp cloth
3:16
and let this rest for 15 to 20 minutes
3:20
to let the door relax
3:21
so after you've let your door rest I'm
3:25
gonna roll it out and divide it into
3:27
three to four equal sized balls I'm
3:32
gonna do fold them for each ball cover
3:34
it with flour and flatten it out lightly
3:37
with your hands then working with each
3:40
disc cover it again with flour and put
3:44
it on your working surface and using a
3:46
rolling pin you want to roll this out
3:49
and do a thin disc using a really light
3:52
hand you don't want to crush it because
3:54
this particular dough is really liable
3:57
you want to make sure it should come
3:59
with practice the thickness is the same
4:01
across the board this will help in the
4:04
puffing process when we are cooking
4:06
these rotis if if while rolling the
4:09
dough is getting sticky put some flour
4:11
and continue rolling so pre-heat your
4:15
tava pan on medium to medium
4:17
he cement our pan is now smoking so now
4:21
let's start cooking our rotis I would
4:24
really recommend if you want to make
4:25
rotis that you invest in at our pan from
4:28
a local Indian store or online the
4:31
temperature that bread cooks I'd I think
4:34
if you use a regular old nonstick pan
4:37
you're gonna ruin your pan so think
4:40
about that once your pan is hot add in
4:43
the disk and cook for about 30 seconds
4:46
to a minute or until you start seeing
4:48
small bubbles appearing as soon as you
4:52
see that flip the roti and cook for 30
4:57
we are then gonna transfer this onto a
5:00
wire rack which has been heating on a
5:02
smaller burner at max Heat this process
5:07
is gonna help aerate the rotis which is
5:09
gonna make it really nice fluffy and add
5:13
some smokiness which is a classic trait
5:15
of any delicious homemade roti do the
5:19
same with the rest of your Odie's and
5:21
you're gonna have an epic stack of
5:23
breads to enjoy with your curry there
5:27
it's a really simple recipe and the
5:30
concepts that I describe really mimics
5:33
what happens when we cook rotis on a
5:36
traditional gas cooktop I hope you guys
5:38
like this video and are ready to make
5:40
rotis at home to enjoy with so many
5:43
varieties of sub G's or curries I'm
5:47
gonna be I'm gonna be havin mine tonight
5:49
with some mutter paneer let me know if
5:51
you guys would like me to do a video on
5:53
that recipe be sure to subscribe to see
5:56
