How to Make Cheese Blintzes

Hi, I'm going to show you how to make my absolute favorite cheese blintzes

To make the crepes, you're going to add the milk, eggs, and vanilla extract

Blend it well until everything is well combined. Then stop the blender and add the dry ingredients

That's the flour and the salt. You're going to blend that again just until it's combined

Do not over blend. I like to run a spatula through it after it comes off the blender just to make sure I've

combined all of the dry ingredients and that none are visible. Cover the blender and let it sit for 30 minutes

Then you're going to heat your frying pan with just a slab of butter

I mean like less than half a tablespoon. You do not need a lot of butter

You also don't want to use a lot because the more that's on there, the more it will brown

and start to burn. If you have too much butter, just dump a little bit of it off like I just did here

Here I'm using a 10-inch pan because the bottom of it is actually 8 inches

The very top where there will be no crepe batter is actually 10 inches

And I want these blintzes to be 8 inches in circle. You want to pour in enough batter to have a very thin layer to cover the entire bottom

You can swirl the pan a little bit to move some of the batter if there's more in one

spot than there is in another. Over a medium heat, it should only take about a minute or two for the bottom to be fully cooked

You'll know that it's cooked because the top will really have no actual wet batter on it anymore

You can put your finger on a drop of it to see if it's fully dry on top

If you feel like the bottom is getting too brown and is in danger of burning, then just

flip the crepe over for literally just a second or two just to get that top part cooked

To remove the crepe from the pan, loosen the edges and then just go under with a spatula

Place the cooked side of the crepe onto a plate and then continue making your crepes

pouring a little more batter in and swirling the pan. Once this one's done, place it on top of the other crepe, again with the cooked side down

You can see the top of the crepe is getting dried up and cooked so that I won't have to

flip this one over

Continue making the crepes until the batter is all fully cooked

To make the cheese filling, combine your farmer's cheese and your cottage cheese and just mash

it together with a fork. The reason why we use both these cheeses is that farmer's cheese is basically cottage

cheese but much drier. Adding a little bit of cottage cheese contributes a little more moisture to the filling

Next, add in the sugar, salt, vanilla, melted butter, and the egg yolk and mix until it's

fully combined

To fill the crepes, you can take two tablespoons of the filling and spoon it onto each crepe

I prefer to use a piping bag or if you don't have a piping bag, take a Ziploc bag and fill

it with the cheese filling and just cut the bottom corner of the bag to pipe it in

I find it much easier to pipe the filling into the crepe and it turns out to be a lot

better shaped this way as well

To fill them, put the cooked side up and put about two tablespoons of filling

I like to use the piping bag so I can get two stripes. I leave about an inch and a half on the bottom and on the sides from the filling

Then fold the top up over the filling and then the sides and then roll it up

Continue doing this with each of the blintzes

As you shape them, put the seam side down

Once you have them all shaped, you can fry them all up or you can just place them in

the refrigerator to fry for the next day or the day after that. They also freeze beautifully at this point

To cook them, again put a small slab of butter on your frying pan

You don't want too much otherwise it will just brown and start to burn

Place about three blintzes on the warmed frying pan and let them cook for a couple of minutes

on each side. You just want to get them nice and brown on both sides

Be sure to place the blintzes in the frying pan with the seam side down

As you're cooking each batch, since you can only fit a few into the frying pan at a time

if the pan starts to burn from the butter, then just stop the process and clean your

pan and then start over with warming up some more butter

While these cheese blintzes are absolutely delicious on their own, you can top them with

some powdered sugar or make a fruit topping. Enjoy
