- **Crust**:
- Mix flour, sugar, and salt in a bowl.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Add ice water a tablespoon at a time, mixing until the dough comes together.
- Divide into two discs, wrap in plastic wrap, and refrigerate for at least an hour.
- **Filling**:
- Peel, core, and slice the apples.
- Toss with sugar, cinnamon, nutmeg, lemon juice, and flour.
- **Assemble**:
- Roll out one disc of dough and place it in a pie dish.
