I'm showing you how easily you can make
0:02
my healthier gluten-free version of the
0:04
famous Starbucks Bliss bar. They're
0:06
naturally sweetened and made gluten-free
0:07
with almond and oat flour. One of the
0:09
secrets to making these bars so
0:11
delicious is adding orange zest. So,
0:13
just take an orange and use your zesting
0:15
grater and go ahead and just zest the
0:17
outside peel. And you want to just get
0:19
the orange part. You don't want to go
0:21
any deeper into the white part cuz
0:23
that's where it becomes more bitter. And
0:25
then you want to end up with about 1
0:26
tbsp of orange zest. and it's going to
0:29
start smelling really good in your
0:31
kitchen. And then we can set this aside.
0:33
To make our cookie dough, we want to
0:34
first blend together our wet ingredients
0:36
and our sweeteners. We're going to start
0:38
with half a cup of cashew butter. And
0:40
you could use almond butter instead. And
0:42
this is going to make it rich and
0:43
creamy, and it's a healthier substitute
0:45
to butter. And then we'll add a4 a cup
0:47
of maple syrup, four a cup of coconut
0:50
sugar, 1 teaspoon of vanilla extract,
0:52
and to ramp up the orange flavor, I'm
0:54
going to add an 1/8 of a teaspoon of
0:56
some orange extract. Now, this is quite
0:58
strong, so you want to use it very
1:00
sparingly. And our tablespoon of orange
1:02
zest. And then I'll mix these on high
1:04
until they're well combined.
1:07
And now that it's really well mixed, we
1:08
can go ahead and add in one egg. And
1:11
then we'll mix just until that egg is
1:12
incorporated. And now we can add our dry
1:15
ingredients, which includes 1 cup of
1:17
almond flour, a half a cup of oat flour,
1:20
and then I have half a teaspoon of
1:21
baking powder, half a teaspoon of
1:23
cinnamon, half a teaspoon of ginger, and
1:26
1/4 of a teaspoon of salt. We'll just
1:28
dump those right on top. And then we'll
1:30
mix these together till we have a really
1:31
soft cookie dough. Now, we want to add
1:34
a/4 a cup of our dried cranberries and
1:36
1/4 a cup of white chocolate chips. And
1:39
then we'll just barely mix these until
1:40
they're incorporated.
1:42
So, the final consistency will be
1:44
similar to a slightly sticky cookie
1:46
dough. And now we can spread the dough
1:48
into our pan. So, I'm just going to use
1:49
a spatula and dump it right into my pan.
1:51
Now, it will be a little bit sticky. So,
1:53
I'm just going to push my fingers in to
1:54
hold my parchment paper in place. And
1:56
then I'll push it out towards the edges.
1:59
And having that parchment paper is going
2:00
to make it so much easier for getting
2:02
the bars in and out later. If you could
2:05
use more healthy inspiration on a
2:06
regular basis, I invite you to join my
2:08
email list. All you have to do is click
2:10
on the link that's in the video
2:11
description below, and that is the best
2:13
way for us to stay connected. And now
2:16
that the dough is all spread out in the
2:17
pan, this can go into a 350° oven for
2:21
about 12 to 14 minutes, or just until
2:23
those edges are starting to turn a
2:25
really light golden brown. So, here's a
2:27
batch that I baked earlier. And as soon
2:29
as the pan came out of the oven, I
2:30
allowed it to rest on my counter until
2:32
it was cool. And then I placed it into
2:35
my fridge so that it could cool
2:36
completely. You can see how easy it is
2:38
to lift it right up and out of my pan
2:40
using my parchment paper. Now, we want
2:42
to make our cream cheese frosting. We're
2:44
going to start with 8 oz of cream cheese
2:47
or one block in a pan. And you want it
2:49
to be room temperature. Then, I'm going
2:51
to add half a teaspoon of vanilla and
2:53
two pinches of salt. And then I'm going
2:54
to mix this on high until it's nice and
2:56
smooth.
2:58
Now that the cream cheese is soft, I'll
3:00
go ahead and add half a cup of organic
3:02
powdered sugar. And you can use regular
3:04
if you prefer. And then I'll mix this in
3:06
until it's well combined.
3:11
Next, we're going to melt down some
3:12
white chocolate. Mix that in with the
3:13
frosting. And then it's going to help it
3:15
set just a little bit firmer on top of
3:17
our bars. So, I've added a/4 a cup of
3:19
white chocolate chips to a microwave
3:21
safe bowl. And then I'm going to heat
3:22
this up in the microwave in 20 second
3:24
intervals, taking out to stir in between
3:27
until it's nice and melted. So, after
3:29
several 20-se secondond intervals, you
3:31
can see that this white chocolate is
3:32
nice and melted. So, I'm just going to
3:34
mix it for a second here just to break
3:35
down any of those little clumps of
3:37
chocolate. Now, I'm going to pour almost
3:38
all of it into my bowl of cream cheese
3:40
frosting, but I'm going to leave about
3:42
oh, a tablespoon of chocolate in the
3:44
bowl to drizzle on top of the bars. And
3:46
then I'll just mix in the white
3:47
chocolate till it's nice and smooth.
3:50
Well, now is a really good time to go in
3:52
for a little pinky test.
3:56
Just for quality control assurance.
3:58
That's yummy. And now we can take our
4:01
spatula and just spoon out our frosting
4:03
and dump it right on top of our bars.
4:06
And this will give you a very generous
4:07
amount of frosting, which I am totally
4:09
okay with. And now that we spread our
4:11
frosting nice and even on top of the
4:13
bars, we can go ahead and sprinkle on
4:15
some more of our dried cranberries. And
4:17
there's really no rhyme or reason to
4:19
this, but you do want to break them up
4:21
so that you don't have any big chunks of
4:22
cranberries cuz that will make it a
4:24
little more difficult for when you're
4:25
chopping through your bars. The final
4:28
step to getting that beautiful Starbucks
4:29
Bliss Bar aesthetic is to drizzle on
4:32
some white chocolate. So, I'm just going
4:33
to take about the tablespoon of white
4:35
chocolate still in my bowl. And then I'm
4:37
going to add in a half a teaspoon of
4:39
some coconut oil because I want to
4:41
dilute that chocolate so it's a little
4:42
bit thinner. And then I'll put this back
4:44
in the microwave for about 15 seconds
4:46
just to melt down the oil and the
4:48
chocolate. So now I'm just going to mix
4:49
this together till it's nice and smooth.
4:52
And softening the chocolate with the
4:53
coconut oil will keep it from cracking
4:55
when you're cutting through your bars
4:57
after it cools. And then we can simply
4:59
drizzle it on top of the bars. It
5:02
creates that beautiful striping across
5:04
your dark cranberries. Now you want to
5:06
put this into your fridge to allow the
5:07
cream cheese and the chocolate to cool
5:09
and set. If you're in a hurry, you can
5:11
also put it into your freezer. Since I'm
5:13
a little on the impatient side, I'm
5:15
going to put it in my freezer. So I have
5:16
here one of my cooled and cut bliss
5:18
bars. And compared to the Starbucks
5:21
Bliss Bar, I think it's a dead ringer.
5:23
They both have that delicious thick
5:25
cookie layer and then they get the thick
5:27
layer of cream cheese frosting with the
5:28
cranberries on top and the white
5:30
chocolate drizzle. But the real question
5:32
is, how does it taste?
5:37
So good. That tastes incredible. As soon
5:41
as you bite in, you get that delicious
5:43
sweet cookie. And then you crunch into a
5:45
white chocolate chip. And then you get
5:47
that kind of sweet tartness coming from
5:49
the cranberries. And then that cream
5:51
cheese frosting just kind of fills in
5:53
all around it. And then you get just a
5:55
little bit of crunch coming from the
5:56
white chocolate on top. Compared to the
5:58
Starbucks Bliss Bar, I love the added
6:00
depth of flavor that you get from the
6:02
coconut sugar and the maple syrup, as
6:04
well as from that oat flour and the
6:06
almond flour, compared to the refined
6:08
white sugar and flour that's in the
6:10
Starbucks version. Now, of course, it is
6:12
a treat and needs to be eaten in
6:14
moderation, but at least you know you're
6:15
eating something with clean, natural
6:17
ingredients that leave me feeling just
6:19
as good even after I eat it. Well, thank
