I'm excited to show you how quickly and
0:02
easily you can make my gluten-free
0:04
chocolate peppermint whoopy pies.
0:09
They have a cream cheese and white
0:11
chocolate filling sandwiched between two
0:13
pillowy double chocolate chip cookies.
0:16
The cookies are made gluten-free with
0:17
almond and oat flour, and they're
0:19
naturally sweetened with maple syrup and
0:21
coconut sugar. Then, they're rolled in
0:23
crushed peppermint candy, which takes
0:24
them to another level of deliciousness.
0:27
We're going to start by creaming
0:28
together our butter and our natural
0:30
sweeteners. And start with half a cup of
0:32
coconut sugar, 2 tbsp of maple syrup,
0:35
and 1/3 of a cup of butter. Then I'll
0:37
simply mix these together until well
0:39
combined.
0:44
And next, we'll add our wet ingredients,
0:45
which includes two eggs, 1 teaspoon
0:48
vanilla extract, and a teaspoon of apple
0:50
cider vinegar. And then we'll mix these
0:52
together just until the eggs are
0:53
incorporated.
0:55
Now we can add our dry ingredients which
0:57
includes 1 and 34 of a cup of almond
1:00
flour, 1 cup of oat flour. I find that
1:03
this combination of flour makes a really
1:05
delicious tender cookie. Then I'll add
1:07
1/3 cup of cocoa powder and then I have
1:09
half a teaspoon of cinnamon, half a
1:11
teaspoon of salt, half a teaspoon of
1:13
baking powder, and half a teaspoon of
1:15
baking soda. I'll just dump those right
1:17
in. Now, as an option, if you'd like to
1:19
get more peppermint flavor in your
1:20
cookie, you can go ahead and add some
1:22
peppermint extract. So, I'm going to add
1:24
about three drops cuz a little goes a
1:27
long way. And I'll just mix these
1:29
together until well combined.
1:33
Now, it smells like chocolate and
1:35
peppermint, my favorites. Now, we can
1:37
add half a cup of mini chocolate chips.
1:39
And you can use any variety that you
1:41
like that meets your dietary preference.
1:43
And then I'll just very gently mix these
1:45
in.
1:48
Well, my kids aren't home right now, so
1:49
that means I get to clean off the beers.
1:51
Now, I'm just going to use a mediumsized
1:52
cookie scoop to scoop the cookies onto
1:54
my tray. And I love lining my tray with
1:56
parchment paper first because it makes
1:58
it super easy for getting the cookies on
2:00
and off the pan. And it also makes for
2:02
easy clean up.
2:05
Now, one of the defining characteristics
2:07
of a Whoopi pie is having that really
2:09
smooth, pillowy cookie. But using almond
2:11
and oat flour are going to give you a
2:13
little more texture to your cookie
2:14
dough. So, a really simple hack for
2:16
getting that smooth finish on your
2:17
cookie is to have just a very small bowl
2:20
of water and then just get your
2:21
fingertips lightly damp. You can keep a
2:24
paper towel close by just so they're not
2:25
too wet. And then you can just go over
2:27
the cookie and kind of smooth it down.
2:29
And you can also push it down just a
2:31
little bit cuz they're not going to
2:32
spread much while they bake. And this is
2:34
going to help give it that smooth
2:35
pillowy finish. Just a little water on
2:37
your fingertips so the dough doesn't
2:39
stick to them. And then gently press
2:41
down your cookie all the way around so
2:43
it's nice and round. While I smoothed
2:45
and shaped all my cookies, so now
2:46
they're ready to go into a 350°ree oven
2:49
for 10 to 12 minutes. While our cookies
2:51
are baking, we can make the cream cheese
2:53
white chocolate filling. What I love
2:55
about this recipe is that it doesn't
2:57
require any additional sugar or powdered
2:59
sugar to sweeten the cream. We're going
3:01
to rely on the chocolate chips that we
3:02
choose, and there's lots of different
3:04
varieties available with lots of
3:05
different sweeteners. I'm going to go
3:07
ahead and just use some vanilla melting
3:08
wafers. We'll begin with 1 cup of the
3:11
white chocolate chips or wafers. Then
3:13
we'll add a teaspoon of coconut oil. And
3:15
then I'm going to melt this in 25 second
3:17
intervals in the microwave, taking it
3:19
out to stir in between until it's creamy
3:22
and smooth.
3:23
So after our first round of 25 seconds,
3:26
you can see that it's just starting to
3:27
melt. So I'm just going to stir it
3:29
around and then put it back in the
3:31
microwave for another 25 seconds. So,
3:33
after our second round of 25 seconds,
3:35
you can see that it's starting to melt.
3:37
So, I'm going to go ahead and stir it
3:39
and see if I can get all those chips to
3:40
melt down completely. If not, we'll put
3:43
it in for just a little bit longer.
3:44
Well, that looks nice and creamy. So,
3:46
we're good to go. We're going to blend
3:47
this together with our cream cheese. And
3:49
you can use a food processor or I'm
3:51
using the chopper cup that comes with my
3:52
immersion blender. Now, you want your
3:54
cream cheese to be room temperature
3:55
because if you take it right out of the
3:57
fridge and we combine it with that
3:59
chocolate, the white chocolate is going
4:00
to harden on us a little bit quicker
4:02
than we want it to. So, a really simple
4:04
hack for warming up cream cheese if
4:06
you've just taken it out of the fridge
4:07
is to slice it into these thinner
4:09
slices, spread it on a microwave safe
4:11
plate, and then microwave it for about
4:13
20 or 25 seconds. And then it softens it
4:16
just enough that it's real easy to use.
4:18
So, I'm going to add one brick or 8 oz
4:20
of cream cheese to my chopper cup. Then
4:23
I'll add 1 teaspoon of vanilla and 1/4
4:26
teaspoon of salt. And now I'll first mix
4:28
down just the cream cheese by itself
4:30
until it's smooth and creamy.
4:37
Perfect. Now we can pour in our melted
4:39
white chocolate. And then we'll put on
4:41
the lid and mix this until well
4:42
combined.
4:47
So as this cools off, it's going to
4:49
thicken with all of that white
4:50
chocolate. So, at this point, it's
4:52
probably a little bit too soft for us to
4:54
pipe it onto our cookies. So, we'll want
4:56
to put this into our fridge for about
4:57
maybe 15 to 20 minutes until it has a
5:00
chance to set. And to help it cool off a
5:02
little quicker, you can pour it into a
5:04
shallow container, which will allow more
5:06
of it to be exposed to the cool air at
5:08
once. So, I'm just going to spread this
5:10
around and then it will go into my
5:11
fridge for about 15 minutes. So, after
5:13
about 10 minutes in the fridge, our
5:15
cream cheese and white chocolate mixture
5:17
is now the perfect consistency that we
5:19
can pipe it into our cookies. Once my
5:22
cookies came out of the oven, I allowed
5:23
them to cool on my counter and then I
5:25
put my tray in my fridge for a few
5:27
minutes just so the cookies are nice and
5:29
cool. So, you can either spread the
5:31
frosting right onto the cookies or I
5:33
have found it works really well to pipe
5:34
it on. And you can use just a sandwich
5:36
bag. And I'm going to poke it down
5:38
inside of a jar here. And then just push
5:41
the bag down inside. And that will hold
5:43
it in place so that I can spoon in the
5:45
cream. And then we can pull it up out of
5:48
the jar, press out the air, seal the
5:52
bag, and then I'm going to clip it off
5:54
about a/4 of an inch. And then we can
5:56
simply turn one of our cookies upside
5:58
down. Press our cream down in the
6:00
corner. And then we're going to want to
6:02
make a circle around the outer edge of
6:04
the cookie. And then we'll fill in the
6:05
center. Here we go. that just has the
6:08
perfect consistency which makes it
6:10
really easy to pipe. So, we're going to
6:11
make a nice smooth circle around the
6:13
outside and then we can fill in the
6:15
middle. We want the cream to be thick
6:17
enough that we have enough surface area
6:18
to add our peppermint candy to. So, now
6:21
I'll just take another cookie and then
6:22
very gently press it on top. Oh, that is
6:25
so cute. So, you can also hold it in
6:28
your hand. And again, you'll just want
6:31
to press a nice thick bead around the
6:33
outer edge of your cookie without going
6:36
over the edge. And then you can fill in
6:39
the center. Then find another cookie and
6:42
press it right on top. Now, you can
6:44
absolutely enjoy them as is or you can
6:46
add the peppermint candy to the cream.
6:48
And I find it works best to just do it
6:50
by hand. Now, you can use some
6:52
peppermint candies or some candy canes
6:54
or even buy some precushed peppermint
6:57
candy. I have a bowl here of some
6:58
crushed candy, and I find it works best
7:00
to actually just take the candy in my
7:02
fingers and then sprinkle it over the
7:04
cream. I find that's a little bit neater
7:06
than just pressing the cookie down into
7:08
the candy. Oh, that looks so good. Now,
7:11
if you want the height to be a little
7:12
bit taller, just pipe a thicker bead of
7:14
the frosting on your cookie. Now, you
7:16
can store these in your fridge if you
7:18
want to set that frosting completely, or
7:20
they can be enjoyed right away. I like
7:22
that idea better.
7:25

7:30
crunchy.
7:31
That tastes amazing. That cookie is just
7:34
soft and pillowy and has so much amazing
7:37
flavor coming in from the oats and the
7:39
almonds as well as the maple and the
7:42
hint of cinnamon. And then the cream on
7:44
the inside is just the perfect amount.
7:45
And I get that cream cheese flavor. And
7:47
then having those little crunchy pieces
7:49
of peppermint candy just makes me feel
7:51
like a kid again. Now, of course, this
7:53
is a treat and needs to be eaten in
7:54
moderation, but I love the fact that
7:56
it's made with clean, natural
7:58
ingredients that are going to leave me
7:59
feeling great even after I eat it. And
8:02
it has a fraction of the sugar of a
8:03
traditional Whoopi pie recipe. Well,
8:05
thank you so much for hanging out with
8:06
me today in my kitchen. And I've
8:08
included a link to the full recipe and
8:10
it's in the video description below. And
8:12
I also invite you to like and subscribe
8:14
to my channel. And if you know someone
8:16
else who you think would love to have
8:18
this recipe, please share this video
8:19
with them. And I cannot wait to have you
8:21
